1. Egg spring rolls
Ingredients for 1 serving:
- 2 eggs;
- salt – to taste;
- seasonings – to taste;
- 50 g boiled turkey;
- 50 g Greek yogurt;
- 50 cheese;
- 1 teaspoon vegetable oil.
Cooking
Whisk one egg with salt and spices in a bowl. Preheat the pan, grease with oil, pour in the egg and spread it on the bottom in a thin layer. After 30 seconds, flip the pancake and cook for another half minute. Repeat manipulations with the second egg.
Let the pancakes cool a little, brush with yogurt. Cut the turkey and cheese into thin slices, put in the center of the egg circle, roll up the pancake.
You can use any filling you like: beef, chicken, fish, vegetables, hummus, and so on.
2. Cottage cheese with blueberries
Ingredients for 1 serving:
- 150 g of cottage cheese;
- 50 g dried or frozen blueberries;
- 50 g pomegranate seeds.
Cooking
If blueberries are frozen, thaw them, and if dried, use immediately. Mix all the ingredients and the dish is ready to eat.
3. Burrito in a jar
This dish can be made ahead of time and stored in the refrigerator for up to two days.
Ingredients for 1 serving:
- 1 tomato;
- 1 clove of garlic;
- 1 slice of lemon;
- 1 teaspoon vegetable oil;
- 100 g canned beans;
- 60 g low-fat cheese;
- 2 tablespoons of Greek yogurt.
Cooking
Scald the tomato with boiling water, remove the skin from it, chop into small pieces or chop with a blender. Add garlic, lemon juice and vegetable oil to the tomato mass. Put the sauce in a glass jar with the bottom layer. Top with beans, then grated cheese. The top layer is Greek yogurt.
4. Oatmeal in a jar
Ingredients for 1 serving:
- 50 g coarse oatmeal;
- ½ cup cow’s or almond milk;
- 50 g applesauce;
- 1 teaspoon cocoa powder.
Cooking
Pour the oatmeal into a jar, add the rest of the ingredients. Stir, cover and leave the mixture overnight to soak up the flakes with moisture and swell. Eat porridge cold or warm in the microwave. The dish can be sprinkled with berries, pieces of fruit or grated chocolate.
5. Baked tomatoes with cheese
Ingredients:
- 3 tomatoes;
- 100 g of cheese;
- 2 tablespoons of olive oil;
- salt – to taste;
- pepper – to taste.
Cooking
Wash the tomatoes, cut them in half, place cut side up on a baking sheet. Brush with olive oil, salt, pepper and sprinkle with grated cheese. Bake at 200 degrees for 15-20 minutes.
6. Portion frittata
Ingredients for 2 servings:
- 4 eggs;
- 1 potato;
- 1 tomato or 4 cherry tomatoes;
- 100 g spinach;
- salt – to taste;
- spices – to taste.
Cooking
Peel and grate potatoes. Beat eggs a little, add potatoes, spinach, salt and spices. Pour the mixture into silicone or metal (they need to be greased with oil) muffin tins. Gently press the tomato slices or cherry halves into the mass. Bake for 20 minutes at 180 degrees.
7. Zucchini rolls
Ingredients:
- 2 medium zucchini – regular or zucchini;
- 1 tablespoon of olive oil;
- 3 tablespoons of Greek yogurt;
- 150 g boiled chicken breast;
- 100 g feta;
- ½ onion;
- ½ red pepper;
- salt – to taste.
Cooking
Cut the zucchini into thin plates, salt, brush with oil on both sides and fry until cooked, then let cool. Finely chop the onion and pepper, cut the chicken into slices.
Lubricate a plate of zucchini on one side with yogurt, put chicken, pepper, onion on it. Roll up the strip and place seam side down on a plate.
8. Refreshing Apple Smoothie
Ingredients for 1 serving:
- ½ banana;
- ½ apple;
- 2 tablespoons of coarse oatmeal;
- 1 cup cow’s or almond milk;
- ¼ teaspoon cinnamon;
- 3 ice cubes.
Cooking
Freeze the banana first and chop the apples. Place all ingredients in a blender bowl and grind until smooth.
9. Banana muffins
Ingredients:
- 180 g coarse oatmeal;
- 1 teaspoon baking powder;
- 1 teaspoon cinnamon;
- 2 ripe bananas;
- 2 egg whites;
- 1 glass of milk.
Cooking
Grind the bananas into a puree. Mix oatmeal, baking powder and cinnamon. Add the rest of the ingredients. Pour the mixture into cupcake molds. Bake for 30 minutes at 180 degrees. Before taking out the finished products, let them cool for about 10 minutes, otherwise they may crumble.
10. Mini pizzas with chicken
Ingredients:
- 4 tortillas;
- 400 g boiled chicken breast;
- 150 g spinach;
- 100 g of cottage cheese;
- 60 g grated hard cheese;
- 3 tablespoons of ketchup;
- 100 g mozzarella;
- 1 tablespoon vegetable oil.
Cooking
Cut chicken and mozzarella into small pieces, mix them with cottage cheese, hard cheese, ketchup, spinach.
Grease muffin tins with vegetable oil. Cut out small circles from the tortilla, slightly larger than the muffin tins. Place the resulting circles so as to form the bottom and sides of future pizzas. Fill them with stuffing. Bake mini pizzas for about 20 minutes at 220 degrees.
