1. Classic pancakes on kefir

Pancakes are thin and very tender.

Ingredients

  • 3 eggs;
  • ½ teaspoon salt;
  • ½ teaspoon of soda;
  • 1 tablespoon of sugar;
  • 2 tablespoons vegetable oil + for lubrication;
  • 160 g flour;
  • 500 g of kefir.

Cooking

Whisk eggs, salt, soda and sugar. Add butter, half of the sifted flour and kefir and mix thoroughly. Add the remaining flour and kefir and mix again until smooth. Let the dough sit for 15 minutes.

Grease a frying pan with oil and heat well. Spread a thin layer of dough over it and fry over medium heat until golden brown on both sides.

Periodically, the pan should be re-greased with oil.

2. Openwork custard pancakes on kefir and water

Ingredients

  • 2 eggs;
  • 2 tablespoons of sugar;
  • a pinch of salt;
  • 500 g of kefir;
  • 300 g flour;
  • 300 ml of water;
  • ½ teaspoon of soda;
  • 2 tablespoons vegetable oil + for greasing.

Cooking

Whisk eggs with sugar and salt. Add kefir and whisk again. Pour the sifted flour, mix thoroughly and leave for 10 minutes.

Gradually pour in boiling water, constantly stirring the mass. Then add soda and beat well. Pour oil into the dough.

Heat up a frying pan greased with oil. Spread a little dough on the bottom and fry over medium heat until golden brown on both sides.

You can grease the pan before cooking only the first pancake.

Ingredients

  • 500 g of kefir;
  • 1 egg;
  • ½ teaspoon salt;
  • 1 tablespoon of sugar;
  • 1 teaspoon of soda;
  • 250–280 g flour;
  • 250 ml of milk;
  • 1 tablespoon vegetable oil + for greasing.

Cooking

Slightly heat the kefir. Add egg, salt, sugar, soda and mix thoroughly. Add flour and mix thoroughly again.

Continuing to stir, pour in the boiling milk in a thin stream. Add butter to the dough.

Grease a frying pan with oil and heat it up. Lay out a thin layer of dough and fry over medium heat until golden brown on all sides.

It is better to grease the pan before each new batch of dough.

  • ½ teaspoon salt;
  • 250 g flour;
  • 200 ml of water;
  • 2-3 tablespoons vegetable oil + for greasing.

Cooking

Combine kefir, soda, sugar and salt. Add flour and mix thoroughly. Whisking constantly, pour boiling water in a thin stream. Add butter to the finished dough.

Grease a frying pan with oil and heat well. Spread a thin layer of batter over the bottom and cook over medium heat until golden brown on both sides.

Lubricate the pan every 2-3 pancakes.

5. Yeast pancakes on kefir

Pancakes will turn out tender, soft and slightly delicate.

Ingredients

  • 130 g flour;
  • 300 g of kefir;
  • 1 teaspoon fast-acting yeast;
  • 1 tablespoon of sugar;
  • 2 eggs;
  • a pinch of salt;
  • 2 tablespoons vegetable oil + for greasing.

Cooking

Sift the flour. Add 200 g of kefir, yeast, sugar and mix thoroughly. Pour in the remaining kefir, beat, cover with a damp towel and leave for 30-40 minutes.

Whisk eggs and salt separately. Gently fold in the egg mixture and butter into the batter and stir to combine. Leave the dough for another 15-20 minutes.

Grease a frying pan with oil, heat well and lay out part of the dough. Cook over medium heat until golden brown on all sides.

It is not necessary to grease the pan before each pancake.

6. Curd pancakes on kefir

Pancakes will be fluffy and tender.

Ingredients

  • 500 g of kefir;
  • 1 teaspoon of soda;
  • 2 eggs;
  • 1 teaspoon of salt;
  • 1 tablespoon of sugar;
  • 200 g of cottage cheese;
  • 100 ml of vegetable oil;
  • 300 g flour.

Cooking

Pour half of the kefir into one container, and the other half into another container. Pour soda into one part and mix.

In the other part, add eggs, salt, sugar and mix. Add curd and blend with an immersion blender. Continuing to beat, pour in the oil and add the flour.

Pour in the second part of kefir with soda and beat well again until a homogeneous consistency. The dough should be thicker than regular pancake.

Heat up a frying pan and pour a little more batter into it than you would for regular pancakes. You don’t need to oil the pan. Cover and fry over moderate heat until golden brown on both sides.

7. Chocolate pancakes on kefir
